Breakfast of Champions

I love eating.  Unfortunately, I don’t love breakfast.  However, I eat it every day, especially because I workout in the afternoon (most days) and I need to get quality fuel into my system first thing.

Lately, we have been having eggs, bacon/sausage, cheese, and fruit for breakfast.  Sounds decadent, right?  Well, it is – but the portions are controlled.DSCN3315

We each get one sunny side up egg (this non-stick pan from Williams-Sonoma does a bangin’ job on the eggs)DSCN3318 DSCN3319

This week, we are each having about 1-2 ounces of CSA breakfast sausage on our open-faced “sausage-egg-n-cheese”-  it gets browned in the same pan- (all of this takes minutes.  Sunny side up eggs are about 3-4 minutes, the sausage about the same- since we pre-cook it a little bit earlier in the week)DSCN3320

Note- the eggs are still soft, because we are going to throw this whole thing under the broiler after we add the cheese.  ALSO- because we don’t want to be cleaning errant cheese off of a pan every day- we line our baking sheet with foil, that has been sprayed with non-stick vegetable oil.DSCN3323

Cheese!  Not too much- we use a veggie peeler so that we aren’t over eating cheese.  We love spicy cheese- so we used Cabot Habanero.  Feel free to use what you like :)   Stick these under the broiler for 1-2 minutes while you get some fruit washed up- today was strawberries and a couple of blueberries.  YUM! DSCN3325

I didn’t clean up the table before breakfast because thisismyreallife and yes, I may have been shopping for seeds about .5 seconds after the photo was taken :)

Feel free to use whatever breakfast protein floats your boat in place of the sausage- we have used prosciutto, bacon, salami, and in fact skipped the protein all together (gasp!). We find that sunny side up eggs are the most fun because we love soft yolks (especially with the nooks and crannies in the muffin). If you don't like that, just make some eggs- this is not the breakfast for you.
Ingredients
  • 2 eggs, best quality you can afford
  • 1 English muffin
  • 2 very small sausage patties (form them from loose sausage, or divide 1 pre-formed (raw) patty into 4 patties- which is what we did)- or sub 1 piece bacon per open face sandwich)
  • 1 ounce cheese, your favorite
  • Salt and Pepper
  • fruits, for health!
Instructions
  1. Toast the english muffin
  2. Meanwhile, crack two eggs into a non-stick skillet that is preheated over moderate heat. Season the eggs with a little bit of salt and pepper. Cook for 3-4 minutes, until the whites are set and the yolk is just beginning to set.
  3. Cook your sausage patties until browned and cooked through (same skillet or a different one). Save time and bake off a weeks work of patties on Sunday- so you can just reheat them next to the eggs!
  4. Place the sausage on the toasted muffin, place the egg on top of that, and top with ½ ounce of cheese per sandwich.
  5. Broil until the cheese is melted. Serve with fresh fruit.
  6. NOTE- this recipe scales up easily! To make mornings easier, get all of the sausage/bacon ready earlier in the week and warm it just prior to using.
