Canned fruits, custard, marshmallows and whipped cream unite in a festive concoction generously referred to as a salad. This recipe recalls the glory days of Wonder Bread, Jello, Miracle Whip and cars with fins.
Ingredients
For the custard:
  • 6 egg yolks
  • 4T pineapple tidbit juice (from canned pineapple below)
  • 4T sugar
  • 2T butter
  • 4T vinegar
  • dash salt
The "salad":
  • 3 1lb 4oz cans pineapple tidbits
  • 2 8.5 oz cans mandarin oranges
  • 1 1lb jar maraschino cherries
  • 1 regular bag miniature marshmallows
  • 1 pint whipping cream, whipped
Instructions
  1. Drain fruits, reserve 4 tablespoons pineapple juice.
  2. In small saucepan, mix yolks, reserved juice, sugar, vinegar, butter and salt.
  3. Cook over low heat whisking constantly until mixture thickens slightly, barely coating the whisk.
  4. Cool completely.
  5. Combine well drained fruits, marshmallows and custard, fold in whipped cream. Cover and chill for 24 hours. Serves 12 or more. Chill leftovers.
