Breakfast of Champions

Feel free to use whatever breakfast protein floats your boat in place of the sausage- we have used prosciutto, bacon, salami, and in fact skipped the protein all together (gasp!). We find that sunny side up eggs are the most fun because we love soft yolks (especially with the nooks and crannies in the muffin). If you don't like that, just make some eggs- this is not the breakfast for you.
Ingredients
  • 2 eggs, best quality you can afford
  • 1 English muffin
  • 2 very small sausage patties (form them from loose sausage, or divide 1 pre-formed (raw) patty into 4 patties- which is what we did)- or sub 1 piece bacon per open face sandwich)
  • 1 ounce cheese, your favorite
  • Salt and Pepper
  • fruits, for health!
Instructions
  1. Toast the english muffin
  2. Meanwhile, crack two eggs into a non-stick skillet that is preheated over moderate heat. Season the eggs with a little bit of salt and pepper. Cook for 3-4 minutes, until the whites are set and the yolk is just beginning to set.
  3. Cook your sausage patties until browned and cooked through (same skillet or a different one). Save time and bake off a weeks work of patties on Sunday- so you can just reheat them next to the eggs!
  4. Place the sausage on the toasted muffin, place the egg on top of that, and top with ½ ounce of cheese per sandwich.
  5. Broil until the cheese is melted. Serve with fresh fruit.
  6. NOTE- this recipe scales up easily! To make mornings easier, get all of the sausage/bacon ready earlier in the week and warm it just prior to using.
